"Wife of Cam" is a bright, fruit-forward sauce. Inspired by the tart, vibrant profile of the fruited sour beer from Afro Caribbean, this sauce is built on a foundation of intense tropical sweetness and sharp, cutting acidity. Crafted as a dedicated tribute to Lauren (my wife), it proudly features her absolute favourite chilli, the habanero. The yellow habaneros provide a fierce heat that intertwines perfectly with the heavy fruit additions, creating a sauce that hits you with a sunny, mango-granadilla sweetness before blooming into a lingering, satisfying fire.
How we're using it
Because this sauce balances the intense heat of habaneros with massive tropical fruit sweetness and a sour, acidic bite, it excels at cutting through rich, fatty foods or elevating clean, fresh proteins.
Try it on: Crispy Pork Rashers, Fish Tacos & Grilled Seafood, Fried Chicken, or be super experimental and mix it into a Vanilla Bean Ice Cream.
How we made it
The journey started with a patient, two-week fermentation. Yellow habaneros and mangoes are placed into the homemade fermentation chamber, precisely regulated at 20°C. Maintaining this constant, cool temperature is the secret to a slow, controlled ferment, allowing the natural sugars to transform into a distinct, tangy depth of flavour while preserving the vibrant heat.
Once the ferment had slowed right down, we blended in a full kg of seedless granadilla pulp to boost that bright, tropical profile, along with a hit of garlic and a dual balance of white and red wine vinegars. After a gentle boil to bring everything together, we carefully adjust the seasoning with brown sugar and citric acid, perfectly balancing the fierce, heat with a lingering, sunny sweetness.
